Portobello Mushroom California Burgers

A lot of the time people get caught up in their busy schedules and find that they are left with no time to cook at home. For those of us who are always on the go, it is so easy to fall into the trap of repeatedly eating out. Although eating out is quick and convenient - 99.9% of the time it is unhealthy! For those who are aiming to live a healthy lifestyle, while juggling a busy schedule we have a recipe for you! This recipe is quick, easy & guilt free! It can be easily customized to your own liking and is perfect for any busy person!


Ingredients:

  • 2 portobello mushroom caps 
  • Olive oil 
  • Herbs: basil, oregano, thyme, parsley  
  • 1 avocado (sliced into pieces or mashed)
  • 1 slice of american cheese (optional)
  • ½ tomato (sliced into thin slices)
  • Arugula 
  • Lettuce 
  • ½ lb meat of choice (pre made burger patties or chicken patties can be bought in any grocery store)

Mushroom Cap:

  • First, rub some olive oil on the cap of the mushroom. After basting it in olive oil, season with salt, oregano, basil, thyme and parsley - you can really season with whatever seasonings you desire, but this is what we found to be delicious! The mushroom cap can be made 3 ways:
    • Oven: 
      • Place the cap on a baking sheet and bake on 400 degrees for 10 minutes. Flip cap over and bake for another 10 minutes or until desired tenderness.
    • Grill: 
      • Place cap on grill until desired tenderness.
    • George Foreman:
      • This is for a quicker cook and only works if you own a george foreman. This method also creates a flattened soft texture to the mushroom. Place cap on the george foreman until desired tenderness.

Filling:

  • A lot of pre made burger patties can be found in your nearest grocery store (E.g. Stater Bros, Sprouts, Ralphs, etc). Note: Check the fresh meat selection for fresher patties! If you would like to make your patty you can buy a ½ lb selection of meat (E.g. ground beef, turkey meat, etc.) roll the meat into a ball, and flatten the meat into a patty-like shape. Cook the patty on the grill or George Foreman until desired if you are using ground beef. If you choose to use turkey meat don't forget to cook the meat entirely before eating! The patty can also be made on a stove top pan with olive oil until cooked. Place cheese on patty once it is done cooking and let that cheese melt (optional)!


Preparation:

  • Once all your ingredients are organized you can put them all together!
  • Place one mushroom cap on the plate, add desired condiments (mayonnaise, ketchup, mustard, etc!). Add tomatoes, lettuce, arugula, on cap. Place the meat patty on the cap. Place 4 slices of avocado or guacamole on the patty, top with second mushroom cap!

Note: This burger can be customized to your own liking! Feel free to add whatever ingredients or condiments you like - it's extremely versatile!
